Yes, you can have an odd number. Here's what you'll want to do since your league currently has 8 teams:
1) Go into League Settings > "Edit League Size" and change # Teams to 12 and # Divisions to 3.
2) In League Settings, use "Create a New Team" to create all of the teams; you can use a temporary naming structure like Team 1, Team 2, Team 3, etc. (The new owners will be able to customize the team name when they join the league.)
3) In League Settings, select "Edit Draft Order" and make sure this reflects the order you want for the draft.
4) On the Standings page, take note of which team is on the bottom of each division. (These are the teams you will be removing to get down to 9.)
5) Go to League Settings > "Remove Owner/Delete Team" and remove the 4th team in each division.
You will see green Invite buttons in the bottom spot of each division, but just tell your new owners to claim teams 1, 2 or 3 from any division and avoid the 4th one. After you draft, those spots will go away, and you will be left with 9 teams in 3 divisions.

That worked, but I realized 9 teams doesn't work with only 1 game a week. Someone is always on bye. That is why we played 2 games a week.
