No, unless you trade your picks away. If no trades were made and you own all your picks, you won’t miss a pick. By keeping only 1 of 2, you’ll draft deeper than teams that kept both.
20 roster spots, 2 keepers, 18 draft picks, keep 1 and you’ll get 19 picks.
It does not skip any rounds, unless you trade that pick away. If you trade your 3rd round pick, then you do not have a 3rd but in the scenario above, you’ll draft into an extra round at the end to get you to your 20 players. Everyone drafts until you all have the 20.
You should definitely keep two players unless you do not have two active players on your roster. Stupid move not to set all your keepers since the players in last rounds will 1) be weak and 2) end up on the waiver wire if you don’t draft them.
