It is different for all four sports and we do take certain players on a case-by-case basis in unique circumstances – it is not concrete as position eligibility in sports aren't; however, we make every attempt not to change positions after your draft is held.
For the NFL, we currently base position eligibility on the NFL team's depth chart and where the player is lined up to play in their media guide during the offseason and the beginning of the preseason. Eligibility is rarely ever changed during the year after Week 2 of the preseason. In football, the NFL team's offensive and defensive scheme greatly determines where they'll be placed.
For MLB, we use an algorithm where the player must have had 10 starts at the position the previous year and will need 7 during the current season to move over. For pitchers, it's 3 starts or 8 relief appearances to move over to a SP or RP during the current year. We usually will never take MLB position eligibility away during the season once it starts.
For the NHL position eligibility is determined by our stats department in the preseason.
For the NBA, it's where the player is listed on their team's depth chart in the preseason. In rare instances, if the player earns a considerable amount of starts or playing time at a new position in the middle of the year, it can be changed.
Because of what he did last year, it accounts for his position eligibility from last year. So until he reaches his LF eligibility this year it wont show up.

With him not even being on the Red Sox Depth chart at SS why is he listed as only SS?
